Bromelain Introduction:
Bromelain is a type of plant extract that is obtained from the stem or the fruit of Ananas comosus, commonly known as the
pineapple. The extract is a protease enzyme that helps to initiate proteolysis. Proteolysis is the digestion of proteins. While
bromelain refers to this particular enzyme within the pineapple plant, it also refers to the extract made from the plant, which can also contain other enzymes, peroxidase, acid phosphatase, protease inhibitors and calcium. Put simply, bromelain breaks down protein. This has fairly obvious benefits when you consider that many of the foods you eat contain high amounts of protein and they have been thoroughly cooked, destroying most of the naturally-occurring enzymes. As a proteolytic enzyme it assists the body's own digestive mechanisms in reducing very large, complex protein molecules into smaller peptide units or individual amino acids. These smaller components are crucial for your own production of muscle, neurotransmitters, and other protein-based molecules that your body produces. Many of bromelain's benefits; however, are actually based on absorption of the intact enzyme in the small intestine; it is this absorption makes possible its systemic effects such as reducing inflammation. Pineapple powder is spraying-dried powder of pineapple juice, the only excipient is maltdextrin. Raw pineapple is an excellent source of manganese (76% Daily Value (DV) in a one US cup serving) and vitamin C (131% DV per cup serving). Mainly from its stem, pineapple contains a proteolytic enzyme, bromelain, which breaks down protein. If having sufficient bromelain content, raw pineapple juice may be used as a meat marinade and tenderizer. Pineapple enzymes can interfere with the preparation of some foods, such as jelly or other gelatin-based desserts, but would be destroyed during cooking and canning. The quantity of bromelain in the fruit is probably not significant, being mostly in the inedible stalk. Furthermore, an ingested enzyme like bromelain is unlikely to survive intact the proteolytic processes of digestion.
Function:
1. Reduce inflammation and swelling - Bromelain may help relieve symptoms of osteoarthritis and rheumatism. It is also used to help sprain and strain recovery by reducing swelling and promoting tissue healing.
2. Improve immune function-Research shows that bromelain promotes a healthy immune system by regulating a variety of inflammatory proteins during cellular stress.
3. Accelerate wound healing-Bromelain has been observed to promote soft tissue healing and reduce bruising after surgery. Patients taking bromelain also had a shorter wound healing time than patients who did not take bromelain.
4. Promote blood flow-Bromelain can reduce platelet aggregation in blood vessels and reduce the chance of clot formation, helping to promote healthy blood flow. This may reduce the risk of atherosclerosis and other cardiovascular diseases.
5. Skin rejuvenation, whitening and spot removal: Bromelain can act on the aging stratum corneum on human skin, promote its degradation, decomposition, and removal, promote skin metabolism, and reduce dark skin caused by sun exposure. Make the skin look good white and tender.
Application:
Bromelain is mainly used in food baking, Meat Tenderization and cheese coagulation in food industry.
Bromelain is used in medicine and health care to inhibit the growth of tumor cells and prevent and alleviate cardiovascular diseases.
Bromelain is used for whitening, rejuvenating and promoting skin metabolism in cosmetic industry.
