Basic Info on Truffle:
Truffle can't be fully cultivated yet, it is mainly from wild with strictly natural conditions.
China has both White truffle and Black truffle, white one is much less. The total yield is very little, and the harvest quantity changes a lot from year to year.
Usually the white truffle has stronger flavor than the black one, it is much more expensive. It is mainly from Italy and Croatia.
Harvest season: From November to next March.
The truffle can be kept fresh by Freezing, it can also be dried and sliced, it takes 5-6kilos to get 1kilo dried one. As the truffle is too expensive, and the yield is not much, so there is not truffle extract in market yet, unless produce after order. For the same reason, the truffle oil is not available unless extract with SCFE-CO2 after order, the oil content is only around 4% in the dried truffle.
