Introduction:

Monk fruit extract is a sweetener derived from the small melon called luo han guo (Siratia Grosvenorii). This fruit is native to parts of southeast Asia, specifically southern China and northern Thailand. Monk fruit has been first used by Buddhist monks in the 13th century, that is why it is called "monk fruit."
Monk fruit extract has been used in traditional Chinese medicine for centuries, the sweetness of the monk fruit depends on the content of antioxidants called mogrosides. Monk fruit extract is about 100 to 250 times sweeter than table sugar, so you really only need to use a little to get the desired sweetness that you're after. Plus, it is fat-free and has zero calories and carbs and doesn't raise blood glucose levels.
